The primary difference between using a wiki and email for collaboration is in the mechanics of each. If you and I were using email and a text document to collaborate, there's a lot that would have to happen between when I edit the document and when you can edit it. With a wiki, however, you're able to see my changes to the document as soon as I save the page.
